Lebkuchen



500 g     honey
1000g    flour
375g      sugar
4            eggs
200g      candied lemon peel, candied orange peel (I chop them very fine)
100g      ground almonds or hazelnuts
15g        cinnamon
1 tsp each of ground cloves, cardamon, nutmeg
scraped off peel of 1 lemon and 1 orange
1 bag of baking powder

mix: eggs, sugar, candied lemon/orange peel, nuts, spices.
soften up the honey by warming it a little in the microwave, add that.
add flour and baking powder.

roll out on a greased baking sheet.

Bake at 320 F for about 20 min, until a fork stuck in comes out clean.

cut immediately into rectangles and the let cool while still on baking sheet.


Glazes:

melt baking chocolate with a bit of water mixed in and spread that with a brush on the lebkuchen
cool, store in airtight container. juice of 1 lemon
add confectioner's sugar until the lemon juice-sugar glaze becomes quite heavy.
spread the glaze on the lebkuchen with a brush
cool, store in airtight container.
